Description
Fresh, local garlic from Gilroy, CA is fermented into black garlic and then fermented with San Francisco grown koji, organic heirloom rice from Koda Farms, and Rancho Gordo midnight black beans.
Miso Style: Red.
Tasting Notes: Rich, tangy, mild sweetness, hints of balsamic.
So many layers of flavor packed in this tiny jar! Use this straight, and try it with any starch or protein you have, you'll be surprised the strength in the richness, or the boldness in the deep sweet and savory notes. We loved it!

Beautiful flavors
The black garlic miso is especially rich and interesting. All of them are beautiful, but right now black garlic and chanterelle are my favorites.

perfect gift

I haven’t had anything I haven’t appreciated from you two, honestly I had just started a batch of my own black garlic miso and wanted something to compare it to and see what I should be looking for in a few months, with any luck it’ll be similar, your spores were used to inoculate the bean I used as well.
